Which of these Desktop Configs should I get?

Personally, I would go with the first setup. There are no programs that really fully utilize all 6 cores right now, so they aren't really necessary. The i7 2600k also has hyper-threading technology which can be very useful when performing multiple tasks at once. The GPU on the second setup is also overkill. No games right now require 2GB of dedicated memory, and during a benchmark test the 1GB 6950 actually slightly outperformed the 2GB 6950 in a few areas. The 6870 1GB is a fairly good card and should be able to handle most games on high detail. Though, if you're going to be doing a lot of serious gaming, the 6950 would be a better choice.
